Springify and Salmon with Roasted Asparagus

It is finally starting to feel like spring here. The sun has been shining and the snow is melting. I have the windows open in my house and I am starting to put out some springy things.

This supper could not have been simpler! I put some olive oil and herbs on a foil-lined baking pan. I put the salmon on the pan and sprinkled lots of dried herbs on top of the salmon. Then, I put the asparagus on another pan, drizzled them with olive oil and salt and pepper. Baked both at 375F for 15 minutes (I took the asparagus out after about 10 minutes). Strawberries for dessert. Yummmmmmmmm!

A Breath of Fresh Air and Parmesan Crusted Salmon

I absolutely love this home featured in House Beautiful magazine. Jill Brinson is a designer and this is her home in Atlanta.

Enjoy and then go try this yummy salmon recipe. It is so tasty! Can you just picture yourself cooking in that gorgeous kitchen?! And the backyard....love it.





Parmesan Crusted Salmon


Makes 4 servings

1/2 cup Parmesan cheese
1 cup Italian seasoned bread crumbs
1 teaspoon dill weed
1 cup white wine
1/4 cup teriyaki sauce
1 tablespoon melted butter
1/4 cup chopped red onion
1 tablespoon minced garlic
2 pounds salmon steaks

In a shallow, medium bowl mix Parmesan cheese, Italian seasoned bread crumbs, tarragon and dill.

In a medium saucepan over medium heat, blend white wine, teriyaki sauce, butter, red onion and garlic. Cook and stir until onions are tender.

Press one side of each salmon steak into the Parmesan cheese mixture. (I breaded both sides.) Place steaks crust side up in saucepan with white wine mixture.
Cook over medium high heat until most of the liquid is reduced, 10 to 15 minutes***, then flip with a spatula. Continue cooking until crust is golden brown and fish is easily flaked with a fork.
***I always end up burning mine, so I pan-fry it for a few minutes on each side and then bake it in a 375F oven til done, maybe 10 minutes or so.

Tuna Cakes with Tartar sauce - round 2


So I made tuna cakes a while back if you recall, without an egg. They turned out not too bad but this one was a little bit better, just because it wasn't so mushy in the middle and it held together a bit better. I also made tartar sauce to go along with it this time and it was nummers. I doubled the tuna cake recipe to feed all five of us. I used less saltines than it called for and I added some feta cheese to it!!

~ 1 (6 oz.) can tuna, drained
~ 1 egg, beaten
~ 1 tbsp. onion, minced
~ 1/4 tsp. Worcestershire sauce
~ 12 Saltines, crumbled
~ 1/4 c. skim milk
~ 1/4 tsp. butter
~ Dash of pepper
~ handful of feta cheese (optional)

In medium bowl combine all ingredients except butter and shape into 6 equal patties. In 10 inch nonstick skillet, heat butter until bubbly and hot; add patties and cook over medium heat, turning once, until browned on both sides.
Makes 2 servings, 3 cakes each.

Tartar sauce

~ 1 cup mayonnaise
~ 1 tablespoon sweet pickle relish
~ 1 tablespoon minced onion
~ 2 tablespoons lemon juice (optional)
~ 1 tsp. dill weed
~ salt and pepper to taste

Mix altogether and refrigerate for 1 hour before using.

Lunch today - Tuna Cakes


I made these for lunch today, improvising because I had no eggs. Yes, they were a bit flaky but all three of my girls ATE THEM! I was thrilled. Even more thrilled than normal because I just kind of threw ingredients in and hoped for the best. I am a 'must have a recipe in front of me' kind of girl so I impressed myself with these tasty cakes. Although anything with 'cake' in the title, can't be all bad.

Basically, they were warmed tuna salad. Here are the details as best I can remember from an hour ago. : )

~ 2 cans tuna, drained
~ 3-4 Tbsp. mayo
~ 1 Tbsp. mustard
~ 1 1/2 Tbsp. relish
~ 1 chopped green onion
~ handful of crumbed feta cheese (got the idea from this recipe)
~ 6 soda crackers crumbled fine
~ few drops of hot sauce
~ pepper
(an egg is probably recommended but I muddled by without one)

I think that was all.

Mix altogether. Form into patties. Melt some butter or use olive oil to coat your pan. Cook patties in pan over medium high heat. Flip over, once they are browned on one side (2 or 3 minutes per side).

We had them with these and it was a yummy fall lunch! Would make a good supper too. : )

Welcome!

Welcome to a blog dedicated to the age-old question, What's to Eat, Mom? I am a mom of 3 young girls, wife to a wonderful hubby, who is a GREAT cook! And everyday, we have the same dilemma, what to cook for supper. I know you do too and that's why I wanted to create this blog (that plus I LOVE blogging). Our girls all have different tastes so we are always looking for meals that appeal to everyone. We do not want to be making three different meals every single night.

My sister and I email each other everyday asking each other, what's for supper? Sometimes we inspire each other with a meal idea or at the very least, we make the other feel like we are not alone! Someone else out there is also trying to figure out what to make for dinner. And not only that, but what we try to make healthy choices for our family that appeal to every member of our family! Tall order, don't ya think? You are not alone!

So please feel free to leave a comment with a recipe you love, or a new meal idea you had. I will post them on my blog for everyone to try!

Baked trout (season with herbs and spices you like, bake at 375F for 20-25 minutes - EASY!)
Cucumber, Tomato and Onion salad (chop into bite-sized pieces, toss with your favourite salad dressing)
Mixed berries for dessert
